Freezer-First Turkey Meatballs
Made to be frozen raw, not eaten as leftovers. Twelve minutes from freezer to plate.

Why it works for me
The trick with ground meat is speed. I buy it, mix it, and freeze it raw the same hour, then cook straight from frozen so it never sits and build histamine.
Ingredients
- 1 lb fresh ground turkey
- 1/2 cup cooked white rice, cooled
- 1 egg
- 2 tbsp finely grated zucchini, squeezed dry
- 1 tsp sea salt
- 1 tbsp chopped fresh parsley
- Olive oil, for the pan
Method
- 1Mix everything gently with your hands — do not overwork it.
- 2Roll into 20 small balls and freeze them in a single layer on a tray.
- 3Once solid, transfer to a bag. Label with the date.
- 4To cook: brown from frozen in olive oil over medium heat, then cover and steam 8 minutes until cooked through.
Serve with olive oil, salt, and rice. Skip tomato sauce entirely.
